"Our starting order of queso fundido came with strings attached - literally, as we stretched strands of mild, melted cheese from a terracotta dish onto rolled tortillas smeared with tangy, smoky chipotle paste. The accompanying cactus salad demonstrated a sadistic streak. The nopales seemed to be soaked in killer jalapeño juice, upped to serial proportions with cilantro and onion, for painful pleasures. The aroma of corn from a steaming bowl of pozole soup, in this case white hominy puffed up to popcorn size, reminded me intensely of trips to Mexico. So did the cockle-warming taste of salty chicken stock and shredded lettuce, customized with freshly sliced radish, dried chilies, lime juice and tostadas for crumbling."
